Serving simple and classical yet seasonal confectionaries, with a focus on seasonal ingredients prepared by "one of the top patissiers of the new generation".

Chef Patissier Tetsuya Yasuzato

Born in 1971 in Osaka, our chef started his career as a Japanese cuisine chef in 1988. At the age of 25, he switched to Western-style pastries as he studied desserts, inspired by the "mizugashi" of fruits served after a kaiseki meal. After joining the Nagoya Tokyu Hotel in 2000, he achieved brilliant success in numerous competitions, including the "Japan Cake Show Top of Patissier" in 2009. He was appointed chef patissier of The Capitol Hotel Tokyu in 2010, and has been successively serving as instructor of the Federation of Japan Confectionary Associations and a judge of competitions.
